Are You Wearing Your Invisible Cape?

My mother is one of the sweetest (will literally give you the shirt of her back) person I have ever met, so naturally growing up I was always raised to see the good in people despite what other people might think or say. She is the kind of person who has never met a Stranger in her life and probably never will. Recently I have been so busy with life it seems like every day is blur to me as well as the random people I encounter on any given day.
Let’s be real not every day is going to be a great day… because well life happens and vice versa. Sometimes I wonder why was that waitress short with me? Or why didn’t that man hold the door for me when he saw me coming with my hands full? I have to remind myself that everyone is dealing with something at any given time. It could be something little or something very drastic that has changed their world. Including myself I am always dealing with something usually its how I’m going to fit all of these tasks into just 24 hours. Sometimes it’s more.
Which brings me to this………

I chose to change my outlook on how I see people that I encounter in my day to day life including strangers!.. Because even though we shouldn’t talk to them right?!?! (STRANGER DANGER) they are still people.

I present to you my very own INVISIBLE CAPE CHALLENGE.

Sounds cool right? Right! Because it totally is.
Instructions: are so easy even a cave man could do it. All you have to do is envision everyone (yes, everyone even the people you may not like) you come across wearing an invisible cape. That’s it. The invisible cape represents whatever that person might be dealing with (Whatever it might be) or maybe they are a hero because they simply made it out the door on time which was me this morning.

I challenge you to try this for a day and see if it changes your view of the world just a little, In fact you may even smile!
Lastly (my favorite part) don’t be boring about it either you can totally make those invisible capes all sorts of pretty colors and designs let your imagination go wild, after all you are already pretending they are wearing capes. Hope you have as much fun with this as I continue to.

ProNuts: A Gift From God

Since moving from the last frontier state all the way down to California or what I like to refer to as the great state of doughnut heaven in which the good lord has blessed me with, you could say my love for doughnuts has grown a little.... Okay a lot... Alright you caught me its all I think about day and night!!!! (lets just keep that between you and me. K? Thanks). Some may call it an obsession, I like to call it widening my knowledge of bakeries.

In fact it has become my new mission to try as many different doughnut shops that I can while I'm here. I may or may not have tried out 5 different places with 2 more already planned out for my next weekend adventures. Whats not to love the gooey glaze, the warm doughy center (those are my favorites), the endless amount of toppings. It is like a little piece of heaven here on earth just for me.
BUT MOLLY you say you are such a healthy person always working out and meal prepping. Doughnuts are BAD for you!!!!
Aren't they?!?!?

I will be the first to tell you there ain't no shame in my game. The doughnut game that is. One bad or unhealthy meal once in awhile isn't going to undo all of your progress just like one healthy meal is not going to give you those muscles or six-pack abs you dream about. Only hard work and a balanced diet can do that for you, so if you want to have a few Oreos after dinner or a juicy cheeseburger go for it. Enjoy every last bite, but come Monday morning your booty better be at the gym. NO EXCUSES

How ever I am also always looking for ways to make the treats that I love better for my body so that I can enjoy them more and that is where the idea for ProNuts came to be in my mind and heart.

Thats right I eat my doughnuts in my doughnut leggings don't you?

If not you really should be.

What you will need is:
1/4 cup Vanilla Muscle Gain Protein or Click Here
1/4 cup almond flour (aka ground almonds)
2 tbsp sugar
2 tbsp almond milk
1 whole egg
1/2 tsp baking powder

Directions:
Blend all the above ingredients until thoroughly mixed. Pour evenly into well oiled doughnut pan (I used coconut oil).
Bake at 355 F for about 12 minutes or until they’ve cooked through. (I would check about half way though).
Let the donuts cool for about 10 minutes before removing them from pan.

My official baking helper. He cleans up what I drop.

Tadda you have just made your first batch of ProNuts. (insert cheering and applauding here!)

If you want to go for extra credit you can ice them with what ever your little heart desires. My favorite so far is Peanut butter for even extra protein or Nutella, but lets be honest you can never really go wrong with that stuff!
*****Most importantly do not forget sprinkles, because you are a winner.*****

Happy Baking Y'all.
I hope y'all enjoy these treats as much as the Tot and I!

Black Bean Brownies & Avocado Frosting

Hey Y'all miss me? I missed you.

I'm just going to be completely honest with y'all OK? OK. I have been doing a somewhat intense fitness challenge with myself (because hello you are your own best competition & its my favorite kind!! Plus lets be real for a second comparison is the thief of joy. You cant be comparing your chapter 1 to someone elses chapter 15. Now I know that is much easier said then done I even struggle with that, but hey I'm human and so are you so don't fret) hitting the gym and weight room 5 times a week as well as running just to keep me sane and then there is clean eating. ugh. I know the two words that make me want to eat a double cheese burger just at the thought. Word to the wise anyone and I mean ANYONE who says they love clean eating are LIARS. Just kidding well kind of. They may like it or be able to tolerate it which is where I am at with it, most days anyways I feel like I have a pretty good handle on that mess which is "clean eating", how ever some days I look at my broccoli and grilled chicken breast (or what ever meal I prepped for that week) and am like "Ya no this is not going to cut it for me".

Some days or time of the month (if you're a chick like me) I just want CHOCOLATE, CHOCOLATE ANYTHING for that matter, so lets say I give into that temptation and have what ever chocolaty goodness that is laying around the house. Like most of us do I will feel happy for the few minutes while I'm stuffing my face full followed by a full day of regret. Which I am just not cool with. Ya dig? Which is what got me thinking there has to be more to the dreadful guilt that comes along with the "clean eating" binge.

So I took to the internet with my love of chocolate and found a few great ideas, recipes and replacements and TADA!!! I give you Black Bean Brownies with wait for it...... keep waiting..... OK....... fine I will tell you......... Chocolate Avocado Frosting..... ya that's right I said frosting.

I thought to my self for a moment...

SELF: you like brownies.
SELF: you really like chocolate.
SELF: you love avocados.
SELF: what are black beans. (I had to learn)

I knew I was up for the challenge.
                                                            (pictures found on pinterest)

Best part is they are husband & not health nut approved!

I now present onto you this SHAME & GUILT FREE glories recipe.
Ingredients:

1 can black beans; rinsed and well drained
3-4 heaping Tbsp raw cocoa powder
2/3 cup gluten free oats
1/4 tsp salt
1/3 cup pure maple syrup (or honey which is what I used because it was on hand)
1/3 cup coconut oil
3 tsp vanilla
3/4 tsp baking powder
1 cup chocolate chips
Directions:
Preheat oven to 350. Mix all ingredients except chocolate chips in a FOOD PROCESSOR.  Once it’s reached a very smooth consistency, fold in chocolate chips and spread into an oiled pan. Bake for 20-25 minutes. Let cool in the pan for at least 10 minutes before cutting.
If you really want to go all out and are feeling a little frisky you can top them with this decadent chocolate icing.
Chocolate Avocado Icing
